Purpose of position:
To prepare and cook a balanced, nutritious diet within a controlled and hygienic environment.To control systems of food allocation to minimise wastage.To serve and review feedback on food and menu from residents, in order to best provide a popular and nutritious menu.To operate and ensure that all purchases are utilised and controlled within a specific budgetTo ensure compliance with food hygiene standards at all times and to achieve and maintain a 5 standard rating upon inspection by the Food Standards Agency.
To actively contribute in the preparation and cooking of food and the cleaning of the kitchen area.To control stocks and purchases, and allocation of supplies as per budget and to avoid wastage.
Nutrition and menu
To maintain a balanced diet and varied menus for residents, with selectable choices and based on nutritional assessment.To follow a set menu.To remain aware of residents’ needs and dietary preferences.
Food is stored safely, securely and hygienically, and stock rotation occurs appropriately.To maintain the kitchen equipment in good and hygienic working order at all times, including documented calibration of food probes.Chilled items stored appropriately and temperatures monitored.Cooked/reheated food is kept above 63C and this is monitored and documented.Reheated food is heated above 70C for 2 minutes or above 75C and this is monitored and documented.Open and use by dates are completed, displayed and respected.Use of colour coded chopping boardsUse of appropriate and logical workflow to separate cooked and uncooked foodstuffs.To maintain appropriate documentation at all times, including safe food documentation.Mops, buckets and cloths colour coded for area.COSHH assessment and storage in place.
To ensure that the kitchen is cleaned after use, including cleaning own pans and utensils, and at the end of each shift, to leave the kitchen in a clean and hygienic state.Environmental review items completed.Areas visually clean and in good repair at all times.Walls & floors in a clean/hygienic condition.Documented evidence of cleaning/deep cleaning schedule.Surfaces/preparation areas clean.To dispose of waste correctly and as per recycling opportunities.Food waste removed daily and stored securely, and food waste containers regularly disinfected.To report any health and safety issues immediately to management, including illness and infection.
To serve at mealtimes in order to monitor appropriate portions and feedback on meals and menus.To ensure that each mealtime represents no less than 1 hour of active service and operation in order to provide an unrushed, enjoyable and comprehensive service to all residents.To have meals READY TO SERVE at earliest of the following times:
Breakfast 8am – 10am
Lunch 12 midday – 1pm
Dinner 5pm – 6pm
Ensure catering supplies of good qualityCheck goods on deliveryEnsure chilled/frozen deliveries are at correct temperature.To hold a suitable food hygiene certificate of at least Level 2 and to fulfil any relevant training courses as required.To perform other such reasonable duties as may be required.
